We can create a link to a webpage but not a mailto: link that would allow us to enter a person's email and just click the box to create an email.

The suggestion is to enable the ability to create a proper email link.

  There is a similar issue with other URIs such as outlook URI's to link to outlook emails on the desktop client. IT would be great if XMind would allow arbitrary URI's that could be resolved by the Operatong system URI resolver...
